My Kuking: Nasi Lemak sambal ikan bilis - Soft and Fragrant Coconut Rice With Sambal (Chilli Paste)

Nasi Lemak or coconut rice. One of Malaysian's most favorites. Good for breakfast, great for dinner and supper as well.
I love nasi lemak.. Especially when i cooked it myself. Since some of my friends requested me for the recipe, i have decided to post in the blog. 

Here we go! 

For the rice ( nasi lemak) 

Rice, wash and drain. 
Then put all these ingridients in the washed rice:

Ginger, bout an inch. Smashed it or scliced it
Lemongrass/serai about 2-3 stalks. Smash the roots
An onion, sliced
A pinch of Fenugreek 
A pinch of salt
A box of small Coconut milk and dont forget add water until it reach the adequate amount of water needed to cook the rice. 
Mix everything. Put the pot in the rice cooker and press cook. 

For the sambal ikan bilis.

2-3 big onions 
3-4 garlic
A handfull of dried chilli ( soak wth hot water or boil it to soften it)
Blend all the above in a blender.

Take  a wok or "kuali", heat a quarter or half a cup of cooking oil. Add in blended chilli and onions mixture. Cook on medium heat until the chilli mixture is seperated from the oil. (U can see a layer of oil forming). 

Throw in 1-2 pcs of "Asam Keping"

 Add in a handfull of ikan bilis ( make sure u cleaned and wash it first) cook again.

Take a big onion and cut it across so the onion became "ring" shape, like an onion ring.. Add the rings to the sambal. 

Cook until the onion rings became transparent. Add in salt or chicken/ ikan bilis stock. A tea spoon of sugar. Taste it. Then its done! 

And yea.. Nasi lemak is not nasi lemak without hard boiled eggs and cucumber slices.
